Anti-inflammatory Recipes (nut-free and also trying to be zero waste in packaging)

It is very hard to be zero waste on this diet!  I try but there is packaging I can't avoid.  For instance,

Goat dairy products:   When we were drinking cow's milk, we could get milk in returnable bottles.  Not so with goat's milk.  We aren't even big fans of goat's milk.  We do however love the yogurt and cheese, both of which come in plastic.  The yogurt at least is in recyclable containers (whether it actually gets recycled or not is a different question) but I can only find goat cheese in plastic wrap that can't even be recycled.

Ghee comes in a glass jar with a plastic lid.  The glass jar can go in recycling (around here it doesn't technically get recycled but it does get used in covering landfills and in roads.)

Bacon can be bought over the counter in brown paper if I go to Whole Foods.  If I buy it from a local farmer however, it's in plastic.

Sausage - Applegate sausage is gf, casein free and most of it can be bought in just cardboard packages with no plastic lining.  That's the type I try to get.  I can get turkey sausage, pork sausage, chicken and apple, chicken and maple and chicken and sage this way.

Berries - frozen berries come in plastic packaging.  I try to buy a big bag to last a while.  I hope to raise my own berries and freeze them.  This past year I got lots from the local CSA and froze them.

Breakfast:

Eggs:
Scrambled eggs (with a drop of water instead of milk) cooked in ghee or bacon fat, can add in bacon, sausage, goat cheese, veggies.

Fried eggs in ghee (makes the best!) served on wilted greens with gluten free bread (preferably made at home)

omelets or fritattas - stuffed with greens, sausage, bacon, goat cheese, leftover roasted veggies, etc.

Baked eggs with avocado

Hot Cereal:

Oatmeal - with maple syrup or honey or cinnamon sugar and fruit (unfortunately gluten free oats can't be bought from the bulk section where you bring your own container.

Buckwheat - ditto

We used to eat a lot of granola but at present, B's clasps for the rubber bands in her mouth won't let her eat crunchy stuff.

Fruit with peanut butter - peanut butter can be ground and put into a reusable container at Mom's.  Whole Foods stopped allowing this.

Goat yogurt with fruit

Smoothies with fruit, veggies and goat yogurt - the problem with this is I don't have a good blender.

Gf pancakes - right now we've been really enjoying Trader Joe's gf pumpkin pancakes.  (Plastic bag inside cardboard box).

Gf bread or rolls made from Pamela's gf flour.  This makes delicious bread with only 1 rise, also good rolls.  If I make a lot of rolls we can eat them with dinner and then I freeze them to have with breakfast later in the week.  Can top with jam, honey, peanut butter or Soom's Chocolate Sweet Tahini Halva Spread (plastic jar).

Dinners:
1) Chili - vegetarian or with meat with corn chips (can return plastic bag to MOM's) with homemade guacamole

3) 1x a week roast, baked, or slow cooker chicken - with rice or roasted potatoes, salad or veggies
4) Tacos with corn tortillas - with salad or veggies
5) meatloaf - with rice, quinoa or roasted potatoes, veggies or salad
6) slow cooker pork roast with coleslaw and hash browns (plastic bag)
7) Fish tacos, sweet potato fries
8) Broiled fish (with ghee and olive oil and lots of lemon), sweet potatoes, salad
9) Salmon patties, corn, salad
10)  grilled hamburgers and hot dogs, hot German potato salad, veggies
11)  broiled chops
12)  pot roast, with garlic goat cheese mashed potatoes, salad or veggies
13)  Steak of some kind (broiled, grilled, pan fried), etc
14)  gf goat cheese pizza with salad
15)  Paleo calzones

Side dishes:
